Rösti
(Swiss Fried Potatoes . Serves 6)

6 large potatoes
1/4 cup butter
1 onion, finely chopped
3 slices bacon (optional)

1. Scrub the potatoes and boil in their skins until barely tender.
2. Drain and peel immediately.
3. Cut into thin slices.  (I use a food processor.)
4. Heat the butter in a heavy skillet.
5. Add the onion, bacon and potatoes.
6. Fry over high heat turning the potatoes occasionally to brown on all
sides.
7. Lower the heat.  Press the potatoes firmly into the pan until a golden
crust forms underneath.
8. Cover and cook gently until tender about 5 - 10 minutes.
9. To remove from the pan:  Place a plate on top of the pan and flip the
pan so that the golden crust is uppermost.

Speedy Baked Beans

2  16oz cans pork and beans                  1tsp. yellow mustard
3/4 cup light brown sugar                         6 slices bacon
1/2 cup catsup                                         1/2 medium onion
(diced)

fry bacon crisp and crumble into beans then cook diced onions till soft
add to beans  add all the ingredients together and bake at 350% for
about 1 hour

Titillating Taters

Take several large potatoes and slice'em like french fries. Soak 'em in
water for 30 minutes. This keeps 'em from discoloring to a sickly brown
color.  Yes, child, even them veggies wanna be uptown white women!

Go Back to my Kickin' Chicken recipe and note the seasoning mixture; it's
the same one you'll use here. Y'gonna need another plastic bag, too. So find
another place to put y'reefer. When y'got this mixture concocted, throw in
those sliced potatoes and put a shakin' down.

Now deep fry just the way I do my chicken. And drain the grease on a paper
towel. When they've cooled some, throw'em on a platter and add salt to
taste.
Watch those fellas munch with gratitude.
And when they're done munching y'can reward'em  with these taters.

Herein follows the Doll's chicken seasoning mixture:

Then I take an ol'plastic bread or grocery bag and fill it with my
seasonings: two cups flour, and y'own determination of salt, pepper,
seasoning salt, and paprika to taste. Now, y'have to use a plastic bag -
otherwise it'll taste just like plain ol'chicken. The plastic makes the
chicken sing. It also saves my lazy ass from having to clean another bowl.
