Old Vegas:

I have been in Vegas for 44yrs. and fondly remember a time
when most of the better restaurants required at least a
cocktail dress from the woman & a sport jacket and tie from
the men.

That was when the Syndicate ran the town. Most of them were
from Rhode Island or Kansas City. Most were business men
and knew how to make things work.

There was little crime.. they wouldn't stand for it.

There was little homelessness.. if you lost your money they
would give you bus fare.

I don't go back as far as you do, but I've been a regular
LV visitor from my mid 20s, mid 1970s or so.

I do remember on my first trip, the older generation
telling us "kids" that Las Vegas was the safest city
there was as far as crimes against persons. They said
that there are very few muggings, purse snatches, etc.
Reason was that if an assault or robbery occured, the
casino security wouldn't go to the local PD, but to
"Guido and the boys", who would hunt down the perps
and have a "chat" with them.

Yes, Las Vegas was far more dressy in the 1970s. Back
then, a nice dress or jacket and tie were expected in
the evening in such things as showrooms, restaurants,
and even at some gaming tables.

Today it's more like "No shirt, no shoes, no problem!"

However, even now in the 2010s, if you wish to dress up
a bit in Las Vegas, it's cool to do so, and it won't
look out of place at all, at least in the evening. Of
course you're likely to be seated at a table next to
Bubba wearing a "wifebeater" and Mary Sue in a tube top.

I do admit I miss the classic "Old Vegas" places like
Stardust, Sands, Dunes, Castaways, Desert Inn, etc.

Still, despite the endless-loop reinvention of itself,
even the "corporatization", Las Vegas is still my
favorite place to vacation. It's a one of a kind!

And yes, it's (still) the perfect venue for Diva
Las Vegas! :)

Thoughts on food:

I've had the opportunity to help plan 'catered' events
at the venue's banquet hall, mainly for funerals and
weddings, for its a custom in Hawaii to have food after
the funeral or wedding may it be lunch or dinner.

I was also involved with the food side of NSD, which
is a small micro view of catered food....ie snacks/
sandwiches etc.

Basically one I was dealing with was for a crowd estimate
over 35 and less than 100 with the rough estimate of 50-60
people attending. How the caterers liked to use the
divisions in their type of menus was in increments starting
from 50 people, then 100 then 200 etc. No compromises, like
for 60. We had to choose 100 which meant if 60 attended
there will be 40 extra and paid for plates. We couldn't
have 50 for it was too small. It ended up at 80 people
attending with only 20 plates extra.

I've never seen at catered events, when what was ordered
as in number of plates matched the numbers that attended.
Either it was too small, and not enough plates to match
the people, or more commonly more plates that people,
leaving a large quantity of food un-consumed and hopefully
will be taken home by those attending as in making extra
take home plates. Having more plates than people was to
ensure no one was left out, but meant that the extra
plates were paid for by the organization that hired the
caterers.

Extra food also means 2nds or 3rds for those that are
still hungry after the first pass of the buffet line and
after everyone has had a chance to go through the buffet.

Food dishes and number of plates was on a set menu and
price. It had to paid for in full several months or days
before the event. This gives the cater time to plan ahead
and make sure the food supplies are delivered at the right
time and food cooked and prepared for the day set for
delivery. This means the food or dishes can be made days
before the actual event, or as late as that morning. For
example cakes can be made a day or so in advance. It has
to baked and cooled down, and frosted before delivery.

So if we go with this event, and IF its similar to the
above we have will have to pay for the extra plates, we
may need to increase the individual price to cover any no
shows for the plates ordered to match the cater's price.
Maybe the $55 price is to cover for this already. So maybe
its for a headcount of 100 people with the estimate of
actually 80 with 20 extra plates and part of the price
is to cover the extra plates.

I'm not sure if the Blue Ox did this for us when we had or
Meet and Greet last year. I hope they were covered, and
didn't take a loss, which would/might have contributed to
them closing.

Because of advance payment there can be no 11hr pull out
from our side, and someone, if there is a low pay, no
turnout, will be stuck with the loss of monies. In this
case it will be Amy. I think this is what the owner of
the Blue Ox was worried about at the meet and greet.

Amy may graciously pay the loss, but losing money is a
known source of friction that can affect any business or
friendship relationship.

We have to find a way to have enough people to attend or
find a way to pay for the loss if it happens that way.

Should we go with this, we really need to leave the specific
details of the activity, including the sizing and such, to
Amy and staff. We will be in essence "outsourcing" this
activity to Glamour Boutique.

We will do our part by promoting the activity as one "which
cannot be missed" and encourage maximum attendance. We'll
also provide GB with such things as timely updates regarding
sign-ups, attendance rosters, cancellations, and of course
the machine-predicted show-up and no-show numbers.

Nora will be our go-between person, and Nora and Amy, with
assistance on both sides, will handle any back-and forth
details. If there's any concern about "making the numbers"
on either side, those two will handle a go/no-go decision.

Now, WRT the food for NSD, since you went with the cold
sandwich trays, I have yet to hear a single complaint about
it! In fact, I was very surprised when I found out the
actual source. :) Simple cold sandwiches are something that
about anyone can enjoy. There was enough variety, and I do
think that the condiments on the side, as you were doing,
is the best, since not everybody like the same things. It's
not haute cuisine by any means, but very good and very
appropriate to the occasion.

With Blue Ox, I don't recall them having any breakpoints
of 50/100/200/whatever. We just kept them updated as to
approximately how many would be eating, and IIRC the numbers
we gave them were very close to the number of paid meals.

The only issue was in 2009 when there was a misunderstanding
of what it was we wanted. We wanted an open bar, with food
optional, they originally proposed a one-price-fits-all with
a toll at the gate. Once our desires were clarified to them,
we were all on the same page. I think that BO did very well
in both 2008 and 2009.
